Brazilian Parboiled Rice Exports

Brazilian Parboiled Rice. The volume of Brazilian rice grains sold abroad increased 73.5% in the comparison between the first eight months of 2019 and the same period of 2020. The figures are from the Ministry of Economy and were analyzed by (M) Dados, core of Metrópoles data journalism. Between January and August 2020, 1.153 million tonnes of rice were exported, while in the same months of 2019 the amount was 871,000. In values, this represents US $ 407 million in 2020 and US $ 225 million in the year 2019.

Information About the Brazilian Parboiled Rice

A processed grain that maintains high nutritional value, preserving nutrients and fibers. Brazil is an exporter with superior quality to international standards thanks to the excellence of its industrial parboiling facilities. This type occupies a consumption rate between 25% and 30% in the country.

Parboiled rice is the rice that underwent the parboiling process, that is, pre-cooking, by immersing the rice (in the husk) in water heated in an autoclave.

Process

The beans go through a process that includes three steps: soaking, heating and drying. After drying, the grains undergo a gelatinization process and then retrogradation of the starch present in the grain.

Color

Parboiling changes the color of rice to light yellow or amber, which differs from the pale white color of normal rice. Still, it is not as dark as brown rice.
